So close we can taste it.
Nothing worth doing is easy.
We have been plugging away at the many aspects of this project with the anticipation they will all come together at the right time. And, we still believe they will!
We are a mere day or two away from filling the glycol system and starting up the chiller. This has been a labor intensive project with much head scratching and learning on the fly. Once completed, we can start up the cold room for keg storage, start to crash and condition beers in the tanks and begin to lager beer. With the electrical connections finalized to the fan coil, pump and chiller, all that is left to do is leak check the system (which is a pain in the butt) and clean and fill the lines.
We have brewed our third iteration of the stout, which we believe is the winning one. We also have a pale ale nearly completed its fermentation and just about ready to keg. Later this week, we will brew IPA #2. That means as early as the end of next week, we could be open for some bottle fills on three beers!
We are still working through tons of licensing paper work and exploring what self-distribution would look like (as a separate entity). There are never ending questions in this industry and seemingly not enough people in the state departments to answer them all. Whichever way you go, there is lot's of red tape and permit requirements from many different parts of the government. Add a pandemic to the mix and it makes for a very uncertain outlook on what our tasting room/brewery will look like and how we will operate.
Needless to say, it has been a very informational experience and the last six months has been fun as we have learned and powered up a small brewery. We continue to tweak and refine the brewing process with our 1.5 BBL pilot system. It has it's challenges, but we believe with a few added ideas, we will be able to make it fit our needs in this interim brewery. We are excited for what the future holds and the perks that our final home will have. It gives us lots to look forward to!
We did receive a favorable appraisal in the last week which we are extremely happy about. This will make some of the unknown of the lending world a bit easier (especially for the banks to swallow). We are meeting with two banks at the moment, with the anticipation that one of them will be our partner moving forwards. At this point, we are hoping for a mid March to early April break ground for the Brew Pub. This would be an excellent way to go through 2021, building an awesome place for people to meet, drink beer and eat great food, all while brewing small batches to share with friends, family and the community.
